2019 Trigg County Country Ham Show Open Class

Ham Show Committee in Charge
1. Three categories available for entry: Trigg Co. produced hams; outside of Trigg Co. hams; Trigg Co. 4-H Youth class
2. Trigg Co. Ham category must be cured and aged in Trigg Co. by the person entering ham.
3. Country Hams must weigh at least 14 pounds and no more than 40 pounds as determined by scale at entry time.
4. Hams may be a short or long cut.
5. Show committee decisions are final on questions, situations or unclear rules.
6. Hams can be entered on Thursday, October 10 between 9:00 a.m. and noon at the Cadiz Baptist Church Annex or they can be entered on Saturday between 7:30 & 9:00 a.m. at Cadiz Baptist Church Annex.
7. Show committee will select a qualified judge from outside Trigg County.
8. Judging starts at 9:30 a.m. (provided all entries are in place).
9. Awards and recognition presentation will be made around 12:00 noon.
10. Ham entries will be on a roped off display Thursday and Friday and after judging on Saturday until 2:00 p.m. Hams must be picked up by 2:00 p.m. on Saturday. 5 top Youth Hams will be auctioned off on Saturday October 12th.
11. Ham judged on following factors:
Conformation (20 points) – general shape
Workmanship (10 points) – neatness & attractiveness of trim
Meatiness (20 points) – ratio of lean to fat
Color 20 points)-desirability & uniformity of outside color (Evidence of excessive salt & moldiness will be discounted) Aroma(30 points) – desirability of aroma as determined by probing with a wood skewer Maximum Points=100
12. Awards: Prizes and awards totaling $850 will be awarded. A silver or brass tray (engraved) is presented to the Trigg County Grand Champion Ham and a silver or brass tray will be given to the Reserve Grand Champion Ham. Out of county category will have one winner selected with a cash award and a ribbon.
13. Prize money and awards provided by Trigg Co. Farm Bureau, Jones Construction, Trigg County Ag Committee and Broadbent Hams.
