A new restaurant is coming to Hopkinsville — The Crusty Pig will bring unique, craft pizza to the city’s historic downtown district.
The restaurant is the group creation of Hopkinsville’s Bar-B-Que Shack owner Mindy Hargrove, Trigg County’s Hancock’s Neighborhood Market owner Mallory Lawrence, and Pennyroyal Arts Council Executive Director Margaret Prim.
The three ladies have been talking about the idea of opening a restaurant for over a year, and Lawrence says The Crusty Pig will be a unique addition to the landscape of downtown Hopkinsville’s restaurants.
Lawrence notes the restaurant is not going to serve traditional pizza.
In fact, Hargrove says she hopes to incorporate BBQ from the Bar-B-Que Shack into some recipes. Lawrence adds The Crusty Pig could also be a way to bring Hancock’s pimento cheese and chicken salad to Hopkinsville.
Prim says the three have had a lot of fun experimenting with recipes and it’s exciting to come together with many different skill sets.
Lawrence says The Crusty Pig will be located at a property of developer Hal McCoy — the old Hotel Latham site on the corner of E. 7th St. and S. Virginia St. — giving a new life to a space that housed what was once an iconic landmark in Hopkinsville’s history.
Hargrove, Lawrence, and Prim plan for the Crusty Pig to be open for business by April of next year.
