Already boasting a strong social media presence and a week of successful soft openings, hungry patrons don’t have to wait much longer for the heavily-anticipated Crusty Pig to open in downtown Hopkinsville.
At 11 AM Monday on 202 East 7th Street, it’s go time, whether its three matrons — Margaret Prim, Mallory Lawrence and Mindy Hargrove — like or not.
December is one of the busiest months of the year for the respective voices of the Pennyroyal Arts Council, Hancock’s Neighborhood Market and BBQ Shacks I & II, and the holiday spirit has them all enraptured as they meet the needs of friends and families alike through Thanksgiving and Christmas.
But everyone has a passion project, and for them, this property — this upscale, eclectic look at a classic pizza joint — is it.
Want a mouth-watering smash burger, or a Cuban made with local pork? Craving a signature namesake pie, or a unique Neapolitan pizza? How about meatballs over a creamy polenta? Do handcut and deep-fried mozzarella sticks, no two the same, strike a fancy? What about fried green tomatoes, smeared in pimento cheese and a nice tomato jam? Feeling light, and need a salad?
Whatever tickles the tastebuds, Hargrove noted it’s there.
There had been hopes of opening this past April, but natural developmental delays did little to deter.
Lawrence said she “could cry,” because it’s “real now.”
Naturally, Lawrence, Prim and Hargrove have deep, deep familial ties to Christian County and south western Kentucky — making Hopkinsville the ideal location for this venture.
But Lawrence noted their own cooking backgrounds, mixed together on a menu, also made sense as a business.
Prim also noted it’s good to have three strong business women in charge to bounce ideas, and that the current staff in place just got its training at the end of November.
The property itself, Prim added, has a refined, personal touch.
Prim and Hargrove also said these three have carried this spark of a concept for quite some time.
Implementation has arrived.
For now, Mondays and Tuesdays will be lunch only from 11 AM until 3 PM. Wednesdays and Thursdays will be from 11 AM until 8 PM. Fridays and Saturdays will be from 11 AM until 9 PM. And a Sunday brunch will be available from 11 AM until 3 PM.
